Easy Semi-Homemade Guacamole Recipe
I like to think that I am good cook, but really one of my favorite talents is too figure out how to make really good food in an easy and quick way.  And that is just the case with my easy semi-homemade guacamole.  It is homemade.  I chop my own avocados and I mix together several ingredients, but I do have one cheat.  Instead of tomatoes, pepper and spices, I add salsa in whatever heat and flavor I am in the mood for. I start with about 4 ripe avocados.  Cutting avocados can me a pain, so you can go here to read about my trick for cutting avocados.  I dice them up and then I use this chopper, smoother tool (the technical name) to mash them up.  I do not know what it is really called, but it is from Pampered Chef and it is one of my favorite tools in the kitchen.  I use it to break up chop meat when I am cooking it, for my potato salad, for mashed potatoes and for guacamole. Once it is all mashed, I squeeze the juice of two limes and add it to the avocado.  Do not underestimate how much the lime enhances the flavor.  Maybe this makes me not authentic, I actually am not sure, but I know it is one of things that makes my guacamole taste so good. Then, I add about a tablespoon of minced garlic.  You could mince your own or use the kind out of the jar.  Since I am going for quick and easy here, I go for the jar most of the time. Then, add about a half of a jar of your favorite salsa.  Blend it all together and taste it.  Sometimes, I add more, sometimes I leave it about half a jar.  It is really a personal choice. And that is it.  Quick, easy and delicious tasting guacamole.  Add some chips on a tray, garnish it with lime and serve. Thanks so much for reading.
