Chili Cornbread Skillet

For this recipe, prepare chili to your liking ahead of time. It can be made a day or

two ahead or this is also a great use for chili leftovers. If you don't have a skillet,

follow the same directions for a 9 x 13 pan. Depending on your pan size, you may

have some leftover mix. Use it to make small muffins or even cook the mix in a

waffle iron for a fun side dish.

  • 1 Package Finding Home Farms Sweet Honey Cornbread mix
  • 3 Eggs
  • ½ Cup Melted Butter or Oil
  • 1 ¾ Cup Milk
  • 5 Cups Chili (depending on size of skillet) fill to 2/3 of skillet

Instructions

  1. Preheat oven to 350 degrees
  2. Combine the contents of the package with eggs, butter or oil and milk.
  3. Add warmed chili to your skillet or pan filling it to about two thirds full
  4. Scoop cornbread mix over top with a 2-3oz cookie/ ice cream / baking scoop leaving an inch or so of room between scoops.
  5. Bake for 30-35 minutes or until a toothpick inserted into bread comes out clean.
