Maple-Pulled-Pork-Cole-Slaw-Sandwich

I am not sure what switch was flipped, but I have been cooking quite a bit lately. I have to admit, a little bit of meal planning before going to the store makes a big difference. And my family couldn't be happier. Our schedule with work and many soccer games has lead me to use our crock pot a lot. And of course, I have been managing to add maple syrup to a lot of our recipes. My favorite type of recipes are quick and simple, and that is the case with this crock pot maple barbecue pulled pork recipe. I added all of the ingredients to the crock pot and then shredded it when I got home. We put our pork on some rolls with some cole slaw and pickles. We were at the table within 15 minutes of getting home. I am not sharing the cole slaw recipe today because I just sort of through it together, but maybe I will share it in the future.

Maple-Pulled-Pork-Sandwich

Crock Pot Maple Barbecue Pulled Pork

Ingredients

2.5 lbs. of pork loin (usually they are packaged as two together, so the weight is for the two) 1 cup of barbecue sauce (I use Sweet Baby Rays) 1/2 cup of maple syrup 1/4 cup of soy sauce

Steps

Mix all of the liquid ingredients together and whisk them. Place the pork in the crock pot and pour over the pork. Turn the pork a few times so that all sides are wet from the sauce. Cook for 6 hours on high and turn of the crock pot. Remove the pork from the crock pot and shred the meat. Place the pork back into the crock pot to get it back up to temperature and cover all of it with the sauce. Serve with cole slaw and serve on rolls with pickles.
